- 1000 g pork back ribs
- 1 /2 tea spoon of instant coffee
- 3/4 cup plum sauce
- 1/2 cup freshly squeezed orange juice
- 2 tbsp of honey
- Salt and pepper to taste
- 6 tbsp KANKUN® chipotle sauce
Preheat the oven to 350 degrees F. Mix 1/4 cup hot water with the instant coffee and stir to dissolve. Once dissolved, combine the coffee with plum sauce, orange juice, chipotle sauce and honey in a small saucepan over medium heat. Bring sauce to a boil; reduce heat. Simmer until slightly thickened, about five minutes. Season with salt and pepper to taste.
Reserve 2/3 of a cup of sauce for basting; use the rest to evenly coat both sides of the ribs. Arrange the ribs, bone down, in a single layer in a foil-lined baking sheet. Cover the pan tightly with foil and bake one hour. Remove foil (from the top), baste with remaining BBQ sauce and bake ribs one more hour. Allow the cooked ribs to rest for 10 to 15 minutes before slicing and serving.
Served with corn and potato wages or your favourite salad.
