Its maker, Rolando Cardenas, first served the chipotle sauce at his famous house fiestas that featured wielding luchadores, yelping mariachis and the most kicking Mexican food in town. Friends would leave Rolando’s house begging to take home a dollop of his home-made chilli sauce. But some liked it hot, some preferred medium, and others mild, so Rolando set about exploring the range of colour and potency of the Chipotle pepper.

He remembered the old saying repeated by his grandma, ‘Mexico has as many varieties of chilli as the hairs on my head’, and he succeeded in making a smoky, tongue-tickling potion that varied in strength of spice. The sauce tasted so good and became so popular people started to order it!
