A Mini Guide to Chipotle Chillies:

1. A Chipotle is made of ripe jalapeños, smoked and dried in a closed smoking chamber, where the peppers are placed over a wood fire for several days. The process of smoking and drying gives the chipotle an earthy, sophisticated spiciness. The end result are gently smoked and dried peppers of which only the finest are used for KANKUN® Sauces.

2. Chipotle, comes from the Aztec word, 'chilpoctli', meaning 'smoked chilli'.

3. Capsaicin, is the molecule in the pepper which produces the heat that makes food hot and spicy! Chipotle is said to be very rich in Vitamins A,C, thiamine, riboflavin, niacin, iron, magnesium and potassium.

Rolando Cardenas, the magical power behind the KANKUN® sauce, learned the art of the perfect chilli mix by sneaking into the kitchen at family dinners and watching, tasting and smelling the age-old recipes that sit at the heart of his family’s tradition.

The steaming hot kitchens were full of stories, gossip and laughter, and little Rolando soaked up the tricks and secrets of the sauces. He then replicated them a thousand times until they were as good as those from his childhood.
