About Chef Marco
“Marco Cuervo, is the executive chef at Lupita Restaurant Chain in London. He obtained a BA in Gastronomy from Del Claustro de Sor Juana University in Mexico City. At Lupita, Marco manages the daily operations in the kitchen, whilst being responsible for the food preparation in addition to being the driving creative force behind the development of the menu.
Lupita prides their selves on the authenticity of the menu. Using the appetizing and fresh ingredients, customers enjoy a range of tacos, tostadas, quesadillas and enchiladas to salads, soups and homemade tortilla chips.
“One of the most traditional dishes in Mexican cuisine is Chicken Tinga; a special recipe, made with a generous amount of onion, scented herbs , shredded chicken and the most important ingredient, Chile Chipotle, that gives main flavour to this versatile dish. This is a great starter that evokes my childhood and dishes cooked by grandma. At Lupita we served with slices of avocado and a dollop of KANKUN® CHIPOTLE SAUCE adding the final touch to this dish” (Marco Cuervo)
