My dad was an accountant by profession and worked hard to give a high level of education to his 4 sons, he has been my real inspiration!  He was my first example of male leadership and as a child, I knew that he was my protector, my provider, and my pal. He was the one that I wanted to please and when I scored or passed an exam at school, it was his smile and approval that meant the world to me.

My dad loved cooking and he taught me great dishes from a young age. Some of my most vivid childhood memories are food related – being at granny’s home were often my aunts were cooking and uncles and cousins flying everywhere (my dad is one of 4 brothers so we have a large extended family!). Being in the kitchen with them cleaning, peeling, preparing, chopping chilies, cutting avocados for the guacamole, or washing dishes; learning by watching and listening about mixing spices,  seasoning, and flavors in food as well as in life.  What a lovely memories.

In Mexican families the kitchen is home back bone, and my family are not an exception. Food is the language we use to care for the people we love, and my dad passed on the gift of the language of food.

I love preparing and eating  Mexican food using the recipes and know-how my father taught me. BBQ recipes are some of my favourites for this season , I am hoping that you will enjoy the dishes from My blog , some of the recipes are a heritage from my dad.Rolando dad
