Originally created as a way to use up leftovers, chilaquiles are perfect for breakfast, lunch or dinner. This dish incorporates corn tortillas or tortilla chips and your favourite sauce red or green, Have fun cooking amigos!
Ingredients
- Corn Oil
- 4 (10 cm) corn tortillas or a package of corn tortilla chips
- cheese, refried beans, avocado, and cream to garnish (optional)
For red and green salsas (Choose your sauce)
- 1 tin of red tomatoes
- 1 tin of tomatillo sauce
- KanKun Chipotle and KanKun Jalapeño
- 1 diced white onion
- 2 garlic cloves
- 2 tsp salt
- 3 tbsp chopped fresh cilantro
Preparation
The Green Sauce
Heat a pan with 1 spoon of corn oil over moderate heat , add the onions, green tomatillos and 2-3 spoons of KanKun jalapeño until cook , garlic clove, salt to taste. Add some water for a thinner sauce consistency.
The Red Sauce
Heat a pan with 1 spoon of corn oil over moderate heat add the red tomatoes, 1to 3 spoons of chipotle sauce, remaining garlic clove, salt to taste. Add some water for a thinner sauce consistency. Put in a blender or food processor.
Fry tortillas:
You can use corn tortilla chips or make your own from corn tortillas. Cut tortillas in chips size. Heat 2 tablespoons oil in a pan over moderate heat until hot but not smoking. Cook each tortilla 30-40 sec each side. Tortillas should be toasted.
Serving the dish:
Serve the tortilla chips on a plate, add your favourite sauce until cover, top up with cheese, cream, avocado, or refried beans. Enjoy!
