Caramelised KANKUN® Chipotle Chicken

For the marinade:

Chile con carne KANKUN® chipotle by Ay Caramba– 40 gms of KANKUN® Chipotle hot sauce
– 100 gms of orange juice
– 60 gms of honey
– 60 gms of finely chopped coriander
– 100 gms of finely chopped red onions
– A pinch of salt
– A pinch of black pepper
– 4 chicken breasts

For the salad:

– 2 yellow courgettes
– 2 green courgettes
– 1 carrot
– 1 red onion
– 1 cucumber


  1. Mix all the ingredients until a uniform mixture to marinate the chicken with half of the dressing and save the other half for your salad
  2. Marinate your chicken for 30 min
  3. With the help of a mandoline, slice your vegetables long ways and very thin. Add the rest of your dressing and mix them together.
  4. Pan fry your chicken on medium heat temperature until is totally cooked. Use your marinade to brush the chicken while it is cooking
  5. Place your salad on the middle of the plate and your caramelised chicken on top
  6. Enjoy it!
