Caramelised KANKUN® Chipotle Chicken

For the marinade:
– 40 gms of KANKUN® Chipotle hot sauce
– 100 gms of orange juice
– 60 gms of honey
– 60 gms of finely chopped coriander
– 100 gms of finely chopped red onions
– A pinch of salt
– A pinch of black pepper
– 4 chicken breasts
For the salad:
– 2 yellow courgettes
– 2 green courgettes
– 1 carrot
– 1 red onion
– 1 cucumber
- Mix all the ingredients until a uniform mixture to marinate the chicken with half of the dressing and save the other half for your salad
- Marinate your chicken for 30 min
- With the help of a mandoline, slice your vegetables long ways and very thin. Add the rest of your dressing and mix them together.
- Pan fry your chicken on medium heat temperature until is totally cooked. Use your marinade to brush the chicken while it is cooking
- Place your salad on the middle of the plate and your caramelised chicken on top
- Enjoy it!
