Step 1: Prepare the Mole
In a cooking pan, dissolve the mole paste in chicken broth (1:4 ratio of mole for 4 or broth) , cook on a low flame for a few minutes stirring frequently to avoid burning, add more chicken broth if required until loose but not too runny consistency.
Step 2 Cook the chicken
Boiled the chicken breast until cooked, and have it sliced or shredded, season the chicken with salt and pepper add it to the KanKun Poblano mole and simmer for further 5 minutes.
Alternative add the raw chicken to the KanKun Poblano Mole and leave to simmer until the chicken is cooked, add more broth if required to avoid the sauce to get dry, but not too runny consistency.
Step 3 Serve and enjoy!
Served with rice, corn tortillas, rolled it with salad in a fajita or simply top it up on your favorite bread.
