2 onions sliced
2 garlic cloves
2 carrots cut in slices
2 courgettes cut in slices
2 potatoes small cubed
1 cup broccoli broken into florets
70 g baby button mushrooms
400g tin of tomatoes
400 g chick peas
2 cups of stock
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground oregano
Vegetable oil, salt and pepper
Chopped fresh parsley
5 tbsp of KANKUN® CHIPOTLE SAUCE
1-Heat 2 tbsp of the oil in a saucepan and fry the onions until golden for 3 minutes.
2-Add the tomatoes, the garlic and all spices.
3-Cook gently for 4–5 minutes, stirring often.
4-Add carrots, potatoes, mushrooms cook for 4-5 minutes.
5-Add the stock.
6-Put a lid on the saucepan and leave it to simmer (15-20 minutes)
7-Add chick peas and broccoli.
8-Add water if to dry leave it to simmer until vegetables are tender.
9-Finally add KANKUN® CHIPOTLE SAUCE.
10-Scatter with chopped parsley before serving.
*Add chicken, beef, fish or shrimps to the process prior to adding the vegetables for a none veggie option.
