Mole is one of  the signature sauces of Mexico,  this recipe for tender pork cooked in a delicious l, fresh green KANKUN MOLE  ingeniously colored by the pumpkin seeds, vegetables, green chillies, tomatillos and herbs. KanKun Green Mole is a fast and quick delicious sauce that will take pork dishes to a different dimension in 3 simple steps.


 5 pounds of pork
1 jar of KanKun Green  Mole
Use a 1:4 ratio of one jars of mole paste  to two cups of  low-salt chicken or vegetable broth
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper



Step 1: Prepare the Mole

 In a cooking pan, dissolve the mole paste in chicken or vegetable broth (1 tsp mole x 4 tsp of broth) , cook on a low flame for a few minutes stirring frequently to avoid burning, add more chicken broth if required until loose but not too runny consistency.

Step 2  Cook the chicken

Season the pork with salt and pepper grilled pork in pan with oil until cooked and soft. Sliced the pork and add it to KanKun Mole verde simmer in low heat for further 5 minutes.

Step 3  Serve and enjoy!

Served with rice, corn tortillas, rolled it with salad in a fajita or simply top it up on your favorite bread.
