Step 1: Prepare the Mole
In a cooking pan, dissolve the mole paste in chicken or vegetable broth (1 tsp mole x 4 tsp of broth) , cook on a low flame for a few minutes stirring frequently to avoid burning, add more chicken broth if required until loose but not too runny consistency.
Step 2 Cook the chicken
Season the pork with salt and pepper grilled pork in pan with oil until cooked and soft. Sliced the pork and add it to KanKun Mole verde simmer in low heat for further 5 minutes.
Step 3 Serve and enjoy!
Served with rice, corn tortillas, rolled it with salad in a fajita or simply top it up on your favorite bread.
