Moles are a traditional Mexican cooking sauce. This recipe add in 3 simple steps an authentic and creative yummy recipe. KanKun Pipian mole adds richness to the dish without overtaking flavors or extreme heat . Prepare the mole in advance and add it to the shrimp or if you rather cook the shrimps in the mole.
Ingredients
2 pounds of shrimp, peeled and clean
1 jar of KanKun Pipian Mole
Use a 1:4 ratio of one jars of mole paste to two cups of low-salt chicken or vegetable broth
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preparation
Step 1: Prepare the Mole
In a cooking pan, dissolve KanKun mole paste in broth (1 tsp mole x 4 tsp of broth) , cook on a low flame for a few minutes stirring frequently to avoid burning, until loose but not too runny consistency.
Step 2 Cook the chicken
Heat a grill pan over medium-high heat with 1 tea spoon of oil oil. Dry the shirmps with a paper towels. Combine shrimp, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook the shrimps on the hot pan, add the Pipian Mole and cook for additional 2 minutes.
Step 3 Serve and enjoy!
Served with rice, corn tortillas, rolled it with salad in a fajita or simply top it up on your favorite bread.
