This is our first post in a series of special recipes designed to get you through the winter months.

KANKUN®, who has a passion for all things Mexican, specialise in authentic Mexican sauces and has developed a deliciously flavoursome Lentil Stew; perfect for those long, cold nights.

As well as being an ideal dish to warm you up this winter, lentils are also a type of food that can help naturally boost metabolism. One cup of lentils will give you 35% of your daily iron needs, and by having enough iron in your system will enable you to burn calories faster!

Follow this very simple recipe for a delectable meal of goodness.

Ingredients

2 cups lentils
6 oz of Mexican chorizo, cut in small pieces (you can use Spanish Chorizo)
3 tomatoes chopped
1 large onion, chopped
2 medium carrots, peeled and cut in small pieces
1 Celery cut in small pieces
3 cloves garlic, chopped
1 bay leaf
6-7 cups chicken or vegetable stock
3 to 4 Table spoons of KANKUN® Chipotle Sauce
Salt and pepper to taste

In a large pot place the chorizo and cook until it has rendered most of its fat. Using a blender, puree the tomatoes and onion.

Drain off the fat from the chorizo, add the puree and cook. Stir for 2 minutes, and then add the carrots and garlic. Cook the ingredients until the carrots are soft.

Add the lentils, bay leaf and the chicken stock. Bring to a boil then turn down heat, cover the pot and leave to simmer until the lentils are tender.

Add 3-4 Table Spoons of KANKUN® Sauce and salt to taste.

Best served with fresh hot tortillas.
