The Yucatan peninsula is the home of one of the most distinctive regional cuisines in the country. Bordering on the Gulf of Mexico to the north, and the states of Campeche and Quintana Roo on either side, Yucatan was for many years, considered a hard-to-reach place because there were very few roads there and it was practically isolated from the rest of the country. Thanks to its ports, the region developed cultural and commercial trading with Cuba, New Orleans and several European countries. This trading influenced Yucatan in such a way that it turned its cuisine into one of the most renowned in Mexico and the entire world.

The Yucatecan cuisine is a combination of well-blended flavours and textures of fruits, vegetables, spices and meat. Some of the dishes are unique to the Yucatan and difficult to find outside of the peninsula, while others are eaten throughout Mexico. Habanero chilli, red onion, sour orange, lemon, achiote (onnato) and corn are the most representative ingredients used in the yucatecan cuisine.
